Corn, Plum and Farro Salad with Nouc Cham Dressing
Juice of 2 limes
3 tbs fish sauce
2 tbs rice wine vinegar
1tbs brown sugar
2 cloves garlic finely chopped
1/2 cup farro cooked as per directions, drain and cool
1 tsp salt
3 ears of corn husked, grilled and cut off cob
4 ripe red plums cut into wedges
1/3 c mint chopped
1/2c cilantro chopped
Dressing can be made a day ahead.
Assemble salad, pour dressing over serve cold or at room temp. Enjoy! I’ve made this two times already to rave reviews. Roz
