Gourmet Magazine Yummy Summer Peach Cake
Sift Together: 1 c flour, 1 tsp baking soda, 3/4 tsp salt
Beat: 2 eggs for 10 minutes until like mayonnaise
While waiting: Heat 1/2 c milk and 1T butter until warm.
Add: heated milk to beaten eggs. Gradually add 1 c sugar, still beating, add flour mixture, mixing only until incorporated.
Pour: into a well buttered 9" shallow spring form pan.
Place into a 350 oven for 34 minutes
Remove pan from oven and place 4 slices (with skins) peaches on top, skin side down.
Sprinkle fruit with sugar.
Bake 10-15 minutes longer.
Cool in pan.
Brush with apricot jam. Serve with a dollop of whipped cream. Delish!
